Like yeah, there’s ways to do stealth screen recording - some Android phones let you turn off the recording notification in developer options, or you could use apps like AZ Screen Recorder with notification hiding enabled. On iOS it’s way harder tho, Apple’s pretty locked down about that stuff.
BUT real talk 
- if you’re trying to record someone without them knowing, that’s kinda sketchy from a privacy standpoint. I get it tho, sometimes parents put crazy restrictions and you gotta document things for your own protection or whatever.
From a forensics angle, these recordings leave traces in the file system anyway - MFT entries, temp files, the works. So it’s not really “secret” if someone knows how to look
